Ratatouille
An easy, healthy ratatouille recipe - a colourful vegetarian feast that will fast become a family favourite.

Tip
If freezing the ratatouille, don't add the basil or lemon juice until it's ready to serve. Ratatouille can be slowly reheated from frozen in a saucepan over a low heat.

2-3 tbsp olive oil
2 small onions, chopped
3 cloves garlic, chopped
4 courgettes, sliced
2 aubergines, sliced
2 large red peppers, seeded and chopped
2 x 400 (14oz) tin chopped tomatoes
4tbsp roughly chopped fresh basil
2tbsp lemon juice
Extra virgin olive oil, to serve

Method
Step 1
Heat half of the olive oil in large frying pan and sauté the onions, garlic and courgettes over a medium heat for 10 minutes or until soft. Transfer to a bowl.
Step 2
Add the remaining oil to the pan, then the aubergines and peppers and sauté for 10 minutes, stirring occasionally. Stir in the tomatoes, cover and simmer stirring occasionally, for 10 minutes.
Step 3
Season with salt and freshly ground black pepper. Stir in the basil and lemon juice and remove from the heat. Serve the ratatouille hot or cold, drizzled with a little extra virgin olive oil.
